You can see a multitude of posts here, where guys talk about how coil overs improved their cars ride.

1) Firms up the ride with out making it harsh. Maintains good daily driving manners but holds the car steady in a hard corner.

2) Allows you to select the ride height best for you without sacrificing ride quality. As you lower the car with stock springs and shocks you lose suspension travel. Which results in a harsh ride when the car bottoms out the suspension.
