Slick size question

I am thinking of making the move to slicks for my road racing track days. Most everyone says to go to 18's all around rather than the factory 18/19. The reason being that there are more choices of tires in 18"
Are there any other reasons why 18" all around is better than 18/19. Going to all 18's means buying wheels and tire. I have to have wheels that will clear my Stop-techs.
Also I understand I need to have a larger size rear tire so the computer thinks it still has an 18/19 combo
Car is an 09 base model with Z06 fenders

Melting Slicks
Stock rear tire is a 325/30-19 on a 12" wheel(correct?), that's a 675mm diameter and there are no 320/675-19 slicks. The Vipers run a rear 310/710-19 Michelin slick but that's a very large diameter. Hoosier makes a Continental GT-O 325/710-19 but again that's a large tire. I'd be concerned about interference when things get bumpy, you should double check and see if others have successfully used such a large diameter rear tire. Hoosier has an R100 in the 295/680-19 that sounds like the closest match. I think the problem you will find with running 19" rear slicks is the limited sizes available, not to mention the price. Its much more affordable to run 18's, especially if you use scrubs.
