Remember, there are lots of places which will put inserts into a a wheel and change the bolt pattern so used wheels are an option for the right look.
Two of my 15" x 10" American 200S wheels were 5 x 5 when I bought them.
Having said that, I think the aluminum wheels from Stretch would work better and likely give you enough room to use the bigger rotors and calipers. The rims on the old aluminum mags are too thick to use the brakes that NASCAR cars use with 15" wheels.

I am way behind schedule, but it is rolling now. The nine inch Ford rear end currently in the car is too narrow. Ordered a 64" housing to replace this 62" unit.
As I used the Howe Trans Am 2 front clip and the matching spindles and upper & lower control arms, I am having to widen the front L88 flares an extra two inches on each side.
Ordering Penske 5" stroke 7500 double adjustables shocks for the front as the 7300 8" units will not work with this setup. The 7300's will work on the rear.
American Racer has some 15x11.5x27 rear rubber that should work and for the front some 15x10x26's on the TA2 aluminum wheels. They kind of have a vintage look.

Great that she's taking shape. John Caruso ran extra wide L88 flairs just before Emory changed the car over to the Greenwood style so it's not without precedent!
I have a used 3 gal Peterson oil tank if you're interested though I know Woody likely has one around the shop.
I cannot make the 9" dia. fit under the RF fender so am going to risk using a new 2 gallon one. I have a stock frame and want two seats so don't have the flexibility that you do.
