Default 54 Spark Plugs

My plugs are collecting soot-appear running rich, and the car hesitates sometimes when accelerating. Wondering if I need a hotter plug.

What heat range have you had luck with?

I run R45S plugs in my '54 with good results. If you are already running a "5" heat range plug, then your carburetors probably are providing too rich a mixture.

If they are, I'd bet money it's because the jets and metering rods are worn. This is a common problem with the YH carbs due to a design issue.

Your best bet would be to find a new or only gently used set of replacement rods/jets. When you install the rods, discard the hair springs on the rod hangers. Those springs do nothing useful and are responsible for the jets/rods wearing.
