I have had a 235/60 on a 15 inch rim, and "barely" fit a 245/50 on a 16 inch rim. My emergency brake cable bracket has been relocated to the top of the trailing arm for space.
If you use updated offset trailing arms you can get bigger tires.

If you really want wider rubber, a better way is 17" rims with wider aspect ratio tires, but then it requires even more modifications and isn't stock any more.
Sounds like you should have bought a C6 or C7.

The body and chassis and resulting tire clearances to the body on your car were designed in 1960 around a 6.70-15 tire on a 15" x 5-1/2" rim, and the car is intensely intolerant of 15" tires and rims that are much wider than 215/70 and 6" without modifications (or broken fiberglass).

Putting different tires is not a change. I'm not sure I would even consider a different wheel a change since those are so easy to swap back.
Back to the Original Poster, did you want to stick with your stock wheels? If so, I think 235/60 is as far as you could go, but that is pushing it for the wheel width, and I'm pretty sure it requires the emergency brake bracket to be relocated (not really much of a change to me either).
If you get new wheels, you can get them wider and optimize the backspace and get a 245 for sure, and maybe wider (again with bracket changes). You can also go for 16" or larger wheels, which might offer better choices of tires.
Will you be cruising, going to the drag strip, or what? With goals and understanding how far you are willing to go to change things, we can offer ideas on the best choices. I personally wanted better handling and acceleration, and modern rubber. So I went to 16x8 wheels and modern high performance tires.
