Use a good quality one
As said you may have to either use a button head type bolt on your water pump maybe even do a little grinding on your water pump etc
Unless you think you really need one a stock type cover its lots less hassle
Bought a one piece thick aluminum one...seals fine but the water pump thing was a pain had to grind the housing a good deal.

Expensive and if not running a roller cam not needed. Haven't had any leak issues with mine as its a nice unit, probably less likely to leak than the stamped gm.

You can setup a roller cam with a one piece cover without much difficulty. The real advantage for a two piece cover is when you change cams frequently.

the issue is clearance, with water pump, you have nearly zero clearance with a stock cover.
just adding additional bolt head thickness is a problem.

if you have 1 " of space between your timing cover and
the back your water pump.
You have the wrong water pump on your corvette.
All corvettes use the short style water pump, Not the long version,
assuming you have all orginal corvette pulleys and brackets,
you need the short pump version to line everything up correctly.

I had the much earlier 2 pc timing cover made by Mr Gasket back in the 70's. It allowed you to change the cam without having to drop the front of the oil pan to get the cover off. That was back when we used cork and sealant and gaskets were often as not reusable. This was on my 67 Camaro and we were changing cams often back then....solid lifter types and before all the fancy charts and dynos were available to us backyard racers.
I like the heavier thickness model from today. Especially if you convert to a roller cam.
