LoL what's wrong with the power steering? Too easy to use?
I love when other people try driving my vette, they get scared to death since the wheel turns if you look at it wrong.

If you are willing to keep the fast ratio all you need to do is replace the pitman arm and center link with the standard ('63-79??) manual steering pieces and remove the steering pump, power cylinder, and cylinder bracket.
If you want to have the easier manual ratio you need to change your spindle arm to the earlier ones with TWO sets of tie rod end positions. By the '80's PS was standard so they eliminated the arms that offered either standard manual or quick manual AND power steering.

I'm under the impression that the manual center-link is hard to come by.

long time ago, before GM vette parts were being discontinued to create warehouse space for front-wheel drive compacts and GM cost-cutting, I had ordered (and taken delivery of) a manual steering center link for my car, it was about a hunnert bucks back then, including the "racer net" special deal (retail plus 20%). I then got another vette and went to order the same part again, but discontinued. I ended up buying a part from Rare Parts that replaced the PS control valve (this was probably 10 years ago), costed couple hunnert dollars. Functionally, attached to the original PS center link, it accomplishes the same thing, but it is a different "implementation" from the factory original. it is a good solution, but it all depends on what you want. Probably the "quick & dirty" way to go to manual steering is to disconnect the hoses from the PS control valve, and plug them with two flare tube nut plugs. Not elegant, but functional, cost: about a buck.
