Default Engine not heating up?

I'm not sure what the issue is but if I take a reading of the engine temp at the thermostat, on the manifold, the temp only reads about 155 degrees. Just above that on the hose connection the temp is only about 130?? Basic engine specs:
ZZ3 crate engine
195 degree thermostat (recommended for ZZ3) I did test the thermostat in hot water and it opened and closed normally.

Could there be an air pocket at the thermostat? I'm pretty sure I've installed the thermostat properly - pointy end up :-) I've also tried a 180 thermostat with the same results?

Appreciate any ideas.

And for what its worth the lower rad hose is not that warm at all - can grasp it
