The 215-70-15 tire is the modern size equivalent of the F-70-15 tire that was the standard (and only) size tire that came on all 68-72 model cars.
68 model year cars had 7" wide wheels and then from 69 forward they were 8" wide.
By today's criteria the 215 tires may look a bit skinny to some people, but will certainly mount on 8" wide wheels with no problems.

F70-15 tires were standard on the '69-'72 C3's which had 8" rims on them. And F-70 tires were equivalent to the 215R70-15 tires you are considering. There should be no problem with installing that size on your 8" rims. I would suggest that you inflate them to 30-32 psi so that they would have no tendency to roll off the bead with a sharp turn at speed.
