Default Check Engine light

I recently installed a set of muffler eliminators on my 85 Corvette and noticed today the Check Engine light was on. I haven't done the check yet but was wondering if that would cause it..It never came on before.

No. Muffler eliminators would not cause that.

Default Check Engine Light

I checked and it is code 15 which is low coolant temperature. I haven't driven this car but to move it in and out of the garage and I didn't have it insured so it sat. I recently insured it so thought I'd take it out some and noticed the Check Engine light but I never drove it long enough to warm it up. Did all the start ups mess it up or should I drive it awhile and see if the light comes on again?

You will get that error if the CTS on the front of the intake manifold is disconnected or otherwise not connected to the ECM. Could be a corroded pin in the connector or broken wire.
