If i build a 406 and use a 1979 block What do I do about all the sensors?

Use em. The sensors do not care what year block they go in. On my L98, the only sensors that go in the block are oil pressure oil temp and the knock sensor. They will all work in a 79 block.

What happens to the coolant sensor?

They remain in the cylinder head or intake manifold.

I'm running a 75 4-bolt 350 block. My sensors only whine when they are supposed to.
