With the above parts, which vortec heads to use? Which vortec heads to stay away from?

Are you using stock cast iron heads or aftermarket aluminium heads? Any 350 vortec head will work fine as long as you have the proper modifications performed to accomidate your cam lift. If you are purchasing aftermarket heads you could use the E-TEC 170cc heads, or E-TEC 200cc heads if you are willing to port match your intake to the heads.

And you have to machine the valve guides to run over .480 lift on the stock L31 cast ones

If I recall correctly, the 219 cam has about .560 lift. If I had the choice, I'd go with L98 heads and avoid the hassles of trying to make things work.
