I am just wondering how this holds up at highway speeds with the double sided tape. Also, if you decide to take it off one day, will it strip off the paint?

That looks good. I like creative DIY projects. I did an entire '84 Mustang 5.0L LX years ago with the black vinyl baseboard product. I did it to make the car look lower.
I'm wondering if there's any detrimental effects on a C5 radiator cooling in warmer temperatures though?

I swung by HD to take a look. This is made of easily flexible, thick rubber and will definitely bend and flex. I see no aerodynamic benefit to this at all. Also with 3M tape I don't see it staying attached at high speeds, so once it detaches it will cause damage to the vehicle. Even if it were secured with body clips or pop rivets, at even highway speed it would just fold under on itself. I put it back on the shelf and walked with a chuckle. Looks are for the eye of the beholder, and that's all this addition is for.
The stock air dams provide an aerodynamic benefit so don't remove those.

Once it is securely taped on, there isnt really much room for it to flex more than 1/4" at most IMO

I always wondered what the infamous "home depot lip" that I see on many other car forums would look like on the Vette...not too shabby, may have to try this after all...

I dont do road courses so I guess Im good to go. I dont think this 1" piece of rubber is really deflecting a lot of air, there's still 6" left under there you know...

It appears to be an air damn, as it looks like it is facing down. In one of the links supplied, it looks as though it was installed as a splitter. Also is it held on with doubled sided tape only, or did you use any screws?

I wouldn't recommend it, its its more like foam rubber than hard plastic
mine is only taped on, no screws
