Help me choose a magazine(s) to subscribe to. How would you rate the above magazines in terms of quality and helpfulness of articles on C5 maintenance and performance? Or is there another magazine I have not mentioned but should consider?

I used to subscribe to Vette and Corvette Fever, but now receive Corvette Magazine. I find it a much better publication - from the articles to the tech tips.

Personally - I don't subscribe to any of the Corvette magazines....they are all higher ad content vs. article content. I totally understand that the ad space is what pays for the production of the magazine rather than the cover price or the subscriptions.
Bottom line is for the greatest amount of how-to information, pictures of on going project cars, viewing other C5's, reviews on new products, even introduction of new products from vendors, humor, controversy, etc......you can get it all free right here on the good old Corvette Forum.
About the only thing you can't do is read articles in john while sitting on the throne - but if you have a laptop and wireless or even a Smartphone, even that can be accomplished. I don't see any need for magazines, and if you read it all online, you'll even be doing your share to save a tree and avoid throwing the magazine in the trash when you're done. There - now because of your newly discovered ecological awareness, you won't feel inclined to buy a Prius out of guilt!

I really like Corvette Enthusiast. They come to a lot of "our" shows and put "our" cars in the magazine. I love that about that magazine. Chris Petris does some very nice tech articles. I take this magazine also.
Corvette Magazine is hard to beat for the great quality of its paper and pictures. I take this magazine and enjoy it. LOTS of advertisement.
My all time favorite place for corvette content is Corvette Forum like has been said already. Hard to beat this place, but there is something about holding the magazine in your hands and not having to wait for the next page to load.

The Best
I'm a member of the NCRS (National Corvette Restorers Society) and I think their quaterly rags are the best available. It's two magazines mailed together. One is a big classified listing of cars, parts, information, etc. The other is a full color tutorial on all kinds if classic Corvette repairs and articles.
Next best is Corvette Enthusiast.
