From what I have seen, GM did not keep specific records on all the combinations. There are some sites that supposedly can narrow things down for you, but not sure just how accurate they are.

I've always really liked the green ones. Don't see one very often and that color combo sounds really awesome/classy!!

Welcome to the forum, from another FG owner.
You can't accurately extrapolate production numbers as you are assuming that there is an equal spread (%-wise) of gray interiors throughout the entire exterior color set. Some color combinations are more common than others, and yours is probably on the least common side. Light Oak and Black are far more common than Gray when it comes to Fairway Green, and Gray is far more prominent with White, Black, Blue and Red C5s. I'd guess that there are probably somewhat fewer than the 40 FG/Gray 1997 C5s that you extrapolated.
And if you haven't already heard it, pictures are mandatory!
