Great thread! I had to scour the net a bit to gather up my intel before putting some C6 GS rims on my car.
Here's my experience with it..
Wheel diameter - 19"
Wheel offset - OEM C6 GS (+59?)
Tire size - 325/30/19
Stock/lowered - lowered on STANCE coilovers
Does it rub? If so, inside/outside - Yes. Rubs inside (installing 5mm spacers to resolve this summer) and also rubs on the outside on dips (will increase damper on coilover this summer for this)
Use spacers? If so, what thickness - will be using 5mm
Do they stick out past the fender? If so, how much - yes, haven't measure. 1"?
What camber setting do you have in the rear - not sure. wasn't as much negative camber as I wanted to fix inner rubbing.
is the car minitubbed - Nope.
IMO, I love the way the tires look sticking out past the fender lip. As others have state, to each their own. It's your car, and you should mod it so that it makes you happy, not others.
Personally, I'm not a fan of the flared fenders. Also, if you go with the wider tires, I highly recommend some L5 or modded C6 splash guards!

IMO, I love the way the tires look sticking out past the fender lip. As others have state, to each their own. It's your car, and you should mod it so that it makes you happy, not others.

Mine occasionally hit on dips. Hard bumps they don't. It's more the dips where you get that slight weightless feeling that allows the suspension to fully compress.
When this happens, I hear a real quick "SHT" (like an air compressor releasing a quick shot of air) and smell some rubber burning. And, will occasionally see a quick puff of smoke from the rubber burning.
I have some rubber on the inside of my fender lip from rubbing the tires.
No cracks so far (that I know of). But, I don't think I've ever come down hard enough on the tires to crack the fender.
I'm pretty careful to avoid pot holes though because I'm lowered quite a bit too.
The tires rubbing is pretty rare though. The roads I regularly drive, I know where it will happen and can adjust my driving accordingly. Also, I'll be increasing the dampening on my coilovers to hopefully help resolve the issue.

You seem to have the right set up for the big wheels looks right ..I think the key is the off set with the right off set and the mini tub no inside rubbing and not sticking out so right combo.. What is the off set of the wheels ? Thanks I have #1319 .For me not looks but traction adding 60 more HP spin city ..

To me 12inch wide wheels just dont fit/look right on a stock C5 without being tubbed, or sticking out alot.
