Default No difference with a 180 stat,

Well I spent most of the afternoon and made a huge mess getting in a 180 stat. Change the fan settings with my Predator to: Fan1:off 185, on 194. Fan2: off 195, on 204. I didn't see any difference in operating temperatures. Are my fan temps off? Got talked into the 180 by the salesman. Should have gone with my gut for a 160.
