Will stock manifold gaskets work with obx headers?

I see no reason they wouldn't, unless they have some sort of defective flange. You could check them with a straight-edge. There's only two different flange designs, round port and "D" port (LS7), and the bolt pattern is the same for all, including the LS7.

Stock exhaust manifold gaskets are the actual gasket of choice in any header application. Run them. You'll be happy you did.

So everyone knows...no, they don't work. The 243 head has a shorter rectangular type circle exhaust port, so the round headers will not accept that, unless you want gasket blocking airflow. Back when I did my headers 9 years ago, I used 2000 camaro gaskets. They were circular. Ls3/7/9 are D shaped.

The superseded part number for the LS1/2/6 heads are all round port gaskets. They will work best in any header application.
Heck, I use them on my LSX-LS7 heads.
