OP is asking .... Does a new 427 1SC Convertible make a good touring car ?
I am not real sure what the OP means by a "Touring Car" ... but if a Touring Car is a car that is good on long distance trips, a 427 Convertible would be just as good as any other late model Corvette.
Drove my GS from north of Boston down to SW Florida without any problems.

As someone else mentioned ... The only downfall of a convertible is the lack off space in the back vs a coupe.
