OK with trace amounts of PS, Brake, Trans, and Diff fluid?
How separate do we have to keep fluids separate? I use a turkey baster for clutch (DOT 4) only, thinking it can't ever hold any other fluid.
Can I not use it to suck out power steering fluid?
Do I need 2 separate suction guns to install diffy and transmission fluid or is one good enough if you blow out the excess?

You can get really **** about fluid cross contamination, it's not necessary. Brake and clutch fluid should stay separate from the tranny and diff fluids, they are similar weight and composition. Tranny and diff fluid not so much of a problem. I have used the same fluid pump for tranny and diff fluids for about 8 years and never had a problem. Just let pump drain for a couple of hours and there will only minor cross contamination and nothing to worry about.
