I just got my wife a new Escalade today and it is our first car with the remote start option on the key fob and it works great here in south texas to cool down the car before entry. Is there any add-on system I can install on my 2011 GS that will allow my a remote start function? It is an automatic transmission.

Doubtful. I've never heard of one.
My wife's Equinox has it, and in 3 years, we've used it twice.
I don't think I'd want one on my C6.

Any remote start system that works on any other car will work on Your vette.Its a Chevy,not a MASERATI,LAMBO,FERRARI...etc. A LITTLE added to the cost because it's push button start but that's about it. Maybe 250ish will get you remote start..at least around here anyway.

I wonder how it would work on a Vette? When used on my Silverado, when I get in I have to put the ignition key in and turn to the run position. How would you do that on the Corvette?

Cadillac has it with the same remote as the C6, here's a guy who did it

Easily. You can literally have one installed at best buy. It's an aftermarket unit you can add to any car, but most shops will only install on auto trans (which the OP has).

You have to trick the car into thinking a fob is inside.
Or you could leave one in and hope no one breaks into the car and then happens to try the start button.
