lots of water leaking out of ac condensation drain?
This black 'hose' below the 2 silver hard lines is leaking a pretty significant amount of water when the car is running. It looks like an AC drain poking out of the firewall. Any idea what could cause water (or coolant) to come out of this hole in any significant quantity? I am not running the AC and just installed a new motor and refilled the coolant system from the upper radiator hose and expansion reservoir.

Is it just water, or is it dexcool and water instead?
The AC will kick on to pull humidity out of the car even when in heat cycle, causing the humidity to form on the AC coils, and then drop off to the bottom of the AC box and out the tube.
If its dexcool, then you have a problem with the heater core instead in the box (crack) and where the dexcool is coming from to drain out the AC box drain line. Note, if the heater core has a leak, the inside of the car should be reeking of dexcool, as well as a humidity build up on the inside of the windshield in windshield heater mode.
As for replacing the heater core, the dash has to come out to just get to the heater/ac box, and not a "fun time to be had by all" kind of thing.

Could be that the vent tube was plugged, and now with the work that you did, started to unplug the vent line with lots of standing water still in the box from before, and it draining now from the vibration of the motor.

Also note that the A/C is enabled unless you explicitly switch it off. If you don't push the crossed-out-snowflake button or the heater isn't cranked, the compressor is usually cycling in these things, even on cool days.

So what did you come up with?
Is is the heater core leaking, or was the AC drain tube clogged up with enough water retained in the AC box that you could have seeded with perch to create a fish farm?
