Default could use advice about cooling fan

this is a 05 base with 6 sp
low mileage
with AC on fan runs full speed all the time

with AC off --- sitting and idling

fan turns on at 220
brings it down to 210 and stops
back and forth 220 down to 210
it never gets above 220
cruising it stays below 200

What's your question? Nothing is abnormal about that behavior IMO.

Two things can turn the fans on: Engine coolant temp and AC system pressure. If AC is on then fans will be on to some degree (highly unlikely they're at "full speed").

ECT can turn the fans on at around 200*F at a low speed (only about 15% of their capability).

They're at 90% (which is as high as it gets) at 224*F. At 210*F they're at 39%, so it's probably just going back and forth between 210 to 220.

Whichever system wants the fans at the highest settings (coolant temp vs. AC pressure) wins.. so if it's 200*F but the AC pressure is high enough to set the fans to 60%, then it gets 60%. With the AC off then the only thing in play is the engine coolant temp, which won't kick them on as high as they'll go until ~220*F

These settings are easy enough to change in the tune for anybody that has the equipment

Here's what the tables look like stock:

it would be great to move those temps down a little

That operation seems completely normal. And I agree that a simple tune can change it, but I would question why one would want to do that. It's all good as it is now. If you are set on lowering the temps, a lower thermostat would be a good thing to add to the re-programming of the fan. (Fan, singular)

The temp is what it is designed to run at. A lower thermostat will not lower the temp, it will just open sooner and in cool weather you will have little to no heat. Although in weather warm enough for either thermostat to be fully open the temps will be the same.
