Will I need new injectors
Winter build
WCCH stage 2 ls7 ported heads
Katech Torquer LS7 110 Camshaft / C5-R chain
Nick Willams 102mm throttle bodies
Fast 102 intake with Fast Billet Fuel Rail
Halltech Super Bee MF103 cai
Kooks 1 7/8" headers w/o cats
muffler modded exhaust cans
With these mods will I need bigger injectors? Not sure on milling the heads yet..

It depends.... If you do not go above 80% duty cycle at WOT - fourth gear, peak rpm, you won't. When you start bumping up to the 90% range is when you need to consider a larger injector.

Would a 1-mile pull at full throttle in 5th gear after a 4th gear 7K rpm shift be in that 90%+ range?

It would be interesting to see engine load comparison between a 1/1 drive train ratio at peak rpm and a higher ratio as in fifth, and where the two curves match. Typically when tuning WOT, you do it in fourth gear and run it up to redline.

I don't know what rpm in fifth would have the same load as forth, so I can't really answer your question with any accuracy.... I reckon Katech or LG would know.
