I started using non-ethanol 91 octane on my C6 and have continued the practice. Performance is great, MPG about 5% better over the long haul. Incidentally, I don't care about the MPG, just reporting results.

I agree. Not only is the mileage better, but the long term stability of the fuel is better without Ethanol. This is critically important for engines that require mixing oil with the gas, but even without a mixture, ethanol-free fuel is much more stable during long term storage and even low mileage applications where a tank of gas lasts for a month or longer.
10% ethanol in the fuel will raise the octane by 2-3 points. At the same time, the engine control module will richen the fuel mixture to compensate for the combustion characteristics of blended fuel.
Is 90 Oct. high enough or would 93 w/ethanol be better?
Seems strange that Premium is 90 octane at sea-level where you are according to your profile...or is that the mid-grade and premium has ethanol and 93 octane. If those are your choices at the same station, I would use the 93 octane. You are not likely to store your Vette in the Winter living in Florida.
The higher the elevation in the vicinity of the gas station, the lower the octane of the fuel sold.
