Lots of torque + tall gearing and good aerodynamics can do that for you.
I had a 2008 Ford Mustang GT (4.6L V8 + 5spd manual) and averaged 26 miles per gallon with three passengers plus luggage on a trip to Florida. At 2,000 RPMs, I was good for 80 miles per hour.
Since I am thinking about getting a Corvette next year, I am pleased to know they get fairly good fuel economy for such a high-performance car.

Corvettes have gotten very good gas mileage ever since at least the C5 - my '00 (MN6) would consistently get 28-30 mpg and my '03 (A4) gets 26-27 mpg on the highway. Reports on the forum show C7s getting above 30 mpg too. GM has done well combining excellent performance and good MPG in a beautiful package.

Folks find it hard to believe when I tell them the Vette get better MPG's than any car in my driveway.

I just completed a 4000 mile trip through WA, ID, MT and WY in M7 base C7. Half interstate and half two lane roads, averaged 32 MPG for the entire trip! I wouldn't care if this car got 20 MPG on the highway, but nice to get both performance and economy in the C7!
