Melting Slicks
After reading this argument...errr... thread the other day I had a thought about a lower tstat and oil viscosity.
If the 160 tstat is indeed effective in lowering the average engine temps 20-30 degrees, then it would also lower the oil temps in a similar fashion right? Would there be any logic running a slightly thinner oil, like say, 5w-20 with a 160 tstat? I'm thinking that the viscosity of the slightly thinner oil is similar to a 5w-30 at higher temps. Just a thought.

oil temps on mine are 200-210 when coolant is 175.

Side note:
The displayed outside temperature on my dash was 100 for my drive to get a haircut yesterday, coolant was steady at 190 if I ran out a couple gears it would go up to 194 then fall right back down to 188 then settle at 190. I stopped to get Sonic and I could hear my fan running and the dash said the coolant was 192 when I looked at it, I did have my AC on though could be why the fan was on. Oil was at 191 for most of the drive, when I stopped and the car heat soaked and I got back in the coolant was 197 and quickly fell to 190 but the oil stayed at 197 for the rest of my drive.

Notice you said average temps, that means sometimes higher sometimes lower. I would want oil that was good enough for the max operating temp of my engine.

I thought I would post my experience with a 160 degree T-stat. In the summer, it wasn't terrible, but the temps were still a bit low. During the winter months, I would drive to work, and it would get to around 160 degrees. I was afraid that running the car this cold is putting additional wear on the motor. Remember, as the block heats up, the pistons and rings expand to form a seal against the cylinder walls. When they're cold there is a slight gap and they kind of knock around (mild piston slap) until they are at operating temp. Running the car hard will cause increased wear on the rings. That's why you don't rev high when it's cold.
If I could, I would get a 180 degree t-stat. I ended up putting my stock one back in though.

My 170 Lingenfelter would "cruise" at approx. 175 summer and winter and heated up just about as fast as the stocker, in warm weather it would go higher in a heart beat missing around.

Photo of T stat after removal
Here's what mine looked liked after a month or so of use - The rubber seal was almost completely torn off causing an impedance to the laminar flow of coolant.
Picked up the LMR unit - Well made, easily sourced T stat replacements and way more consistent ECT's during operation, total winner!

Burning Brakes
I had to call their shop and order mine over the phone. I'm not sure about other temps, but I don't see why not.
