Default Octane rating

I was told by the people at race gas that the C7 computer can utilize fuel with octane from 91 to 100 plus. It will adjust itself to use it. Is this true?

Yes and no.

Higher octane gas means it is more resistant to ignition before the ignitions system does it.

If the engine knocks, then yes, the PCM the will not pull timing or switch to the low octane table.

If the engine does not knock, then no.
