on the colored spoilers, why does the Carbon Flash not fit the Z51 but the other colors do?

I am not sure why GM chose to add that in there, but it is the same size as the other spoilers, and also comes with the instructions to install on the Z51

Have Stage 1 on my car. What's the item(s) needed to get to Stage 3. I intend to track the car so could use the extra downforce on my butt.

yes, it includes both ends and all the mounting hardware!

just to clarify, for the front splitter. If we have the stage 1 already, we only need the winglets?

If you have the Stage 1 splitter, then you will need to purchase the stage 2 splitter in either carbon flash painted or carbon fiber exposed in order to use the stage 3 winglets

The stage 2 splitter is offered in either carbon flash painted or exposed carbon fiber, the stage 3 parts are the larger end winglets used on the stage 2 splitter
