Different applications can require different fluids. Not everything is about temperature. If you read the specs on the Super DOT4 recommended by GM for the clutch it has a lower viscosity rating. That may not be required in the brake system so they don't over specify what is required. Also note that not all DOT4s have the same viscosity rating. That is why you can't just run down to the auto parts store and pick up the DOT4 can nearest to your hand.
As for brake fluid boiling points there are several DOT3 fluids available that will outperform regular DOT4 fluid (whatever that really is).
