what is the widest tire size that fits on OEM wheels for a C6?
I drive a 2007 C6 and I am planning to stay in stock class.
I am planning to get
front: 275/35-18
rear: 295/30-19
Will these fit on the wheels, and the car?
What tire size would you recommend?

I haven't seen the 275 tire recommended on the 18x8.5 that we're stuck with stock. The Hoosier A6 wants a 9.5 wide rim minimum. The Toyo R888 wants a 9.0 wide rim minimum. You could probably mount them, but who knows if they'd be any better than getting something narrower. Somebody must have tried it by now?

Yes,
275/35-18 might be too wide for the OEM wheel, given the already too low tire profile.
Would you recommend
255/40ZR18
as a front tire? Will it fit?

Pull up the manufacturers website and find their tire specifications web page; TireRack publishes a lot of these specs, too. That page will tell you the recommended rim widths.
As an example:

So the Toyo R888 in 255/35r18 is recommended on a 9in rim, but will fit 8.5in-10in.

If you are looking at doing SCCA SS Class then you are limited to the stock size wheels.
Given that lots of people fit 275's on 8 inch wide wheels you won't have much of a problem. Remember that the R Tires (you will probably be going with the Hoosier A6s) are much stiffer than typical street tires so they will work just fine with the sizes that you have picked.
Granted, if you could run a larger wheel it would be better, but given the stiff sidewalls of the A6 you will be fine.

Something else you need to take into account is the amount of rake you will get with the tires you have chosen. I haven't looked at the chart so I don't know what they are. You can only run a Hoosier for AutoX as they are the only ones making a 19, so there is no other choice. I run ASP and before having a custom set of CCWs made, I was running 245/40 up front and 295/30 out back. It works quite well IMO.
