Temp of brake pad backing plates?
Has anyone taken temps at the track? How hot do these get (I realize it depends on the amount of pad material remaining)?

I think it would be very difficult to find out how hot they actually get during use since by the time you came into the hot pit they could have cooled by as much as 350F - 500F degrees.
Under track conditions I would expect to see temps in the 800F to 1200F range at the backing plate.

Running titanium pad shims will save your dust boots (if you have them) and keeps heat out of the caliper/fluid in general. Wish they made them for the rear. My front caliper dust boots still look fine vs. my rears which are nearly completely melted.

I have measured 800-900 f with infared, but that's after cool down lap into the pits so add some to that.
That's the pad/backing area in general, outside pads.

If you really need to know then you can try a product like the below.

I expect that using a temperature indicating paint on the rotor is a better indicator of the operating temperature of the pads at the more critical surface in contact with the rotor.
