If they're for the track only (changing wheels there, not driving to/from) then I would go with a Hoosier drag radial in 315-35-17.
If driving to/from the track on them, Mickey Thompson drag radials in the same size. You can drive (in DRY weather) on the Hoosiers but they will wear out very quickly.
Either one of those tires and a trip to Atco this Saturday should get you right into the 10s.

Welcome. 16" drag radials (255-50-16 on a 16x8 or 16x9 rim) would likely be even better (even though they're notably narrower than those 315s, they also have that more beneficial and more flexible sidewall at roughly the same overall height) but I was only suggesting what I think is the best size tire that specific sized rim that you want to use.

I am looking for the best drag only (car will be trailered) rear wheel/tire combo for a 2012 GS A6 700+ RWHP that will:
1. Work with the stock fronts (25.6" tall)
2. "Plug and Play" on the GS/Z06 brakes (no drag spindles so I assume 17" is the smallest diameter wheel)
3. Not send the Active Handling nannies crazy due to front/rear tire diameter too great (I am led to believe a 28" tall rear will do this)
I like the look of the Weld RT-S wheel but function not form is most important to me.
Thanks in advance.

Stock rear brakes/rotors/calipers as well I assume?
For more of a budget oriented set up, a pair of front C5 Z06 rims size 17x9.5 (OEM preferred over aftermarket/replicas) with a set of fresh/new 275-40-17 Hoosier drag radials could get it done. If money is no object then a set of those Weld RT-Ss (beautiful wheels but not the lightest option available) or another aftermarket rim (Bogart, Holeshot, CCW etc.) in size 17x9.5 (or x 10) would be good.
With the aftermarket rims, you just have to be sure that the offset is correct and that they can clear the large brakes of a C6 Grand Sport (or C6 Z06) as the C5 Z06 rims do.
That tire will appear a little 'narrow' under those wide rear fenders but they work and have hooked some low 1.3x sixty foots (I've personally seen them cut a 1.32 and a 1.34 ) but those were on automatics making less than 500rwhp at the wheels.
You might need more tire (295-45-17s or 315-35-17s?) depending on air temps and track prep.

Thanks for the response. The car has a built Century transmission, Pro-Torque 2600-2800 converter and a 3.42 C6Z06 rear. Brakes/rotors/calipers are stock. I need as much tire as I can get under the car. I must admit I did not do enough "homework" before I chose the widebody GS over a base car as the "donor" for my drag car project. I thought "wider is better" and did not understand at the time sidewall is better than width. It looks now like the extra money for the GS and the "steamroller" 345/35/19 Nitto NT05R DR's was wasted . Any additional guidance would be appreciated.

Stock torque converter or aftermarket/higher stall/performance converter in that A6?

I'm going to recommend the Hoosier 315-35-17 drag radials on any 17x10.5 or 17x11 rims that you can get to properly (offset/backspacing etc.) fit on the car.
Those tires will fit on the C5 Z06 front 17x9.5s but it will not give you an ideal sidewall (which I believe you will need with that kind of power).
