Default To dye or not to dye

I am considering a 68 convertible L79 car. The car originally was LeMans Blue with M Blue interior. The seller has been gathering parts and resorting the car back to original using no reproduction parts. However the seller was in the process of changing to black interior. So far the dash has been dyed black, and shift area, he located excellent door panels (black), like new black seat belts, and a few other parts. It still needs seat covers, and carpet. Questions: 1. Is dying the dash and panels to blue a good idea? They are in great shape but the dash looks like it was dyed at least twice. Can it be cleaned or stripped? 2. Can I get replacement seat belt material. 3. Are the 68 and 69 dash pads, the same (other than map pocket) and is a reproduction any good for judging?
