I don't have pictures but hwy. 299 in CA from Redding to Eureka is a nice drive lots of very tight windy stretches through Trinity National forest. Then of course there is the PCH. Some more nice stretches but known for it's bridges and scenery. A must drive IMO if your in the western US.

2 of the roads you posted pictures of I've driven when I lived in Europe back in the late 90's. The Colle Delle Finestre & Gotthard Pass. Both are definitely fun roads, my wife didn't care for them too much though.

Unless you like speeding tickets, I would skip the old columbia river highway.
I would recommend Highway 53 in the north Oregon coast range. It runs between Hwy 26 and hwy 101

Take HWY 224 out of Estacada heading south. It will turn into NF-46 which will take you to Detroit Lake.
Very little traffic, some nice scenery, and some curvy parts.
There is no gas (or anything else) after you leave Estacada until you reach Detriot Lake.

I was at an Audi Club event taking place at Mary Hill Loop Road and was headed to a dive club event the next day west of Detroit Lake. I took a quick look at a map and saw a road I thought might have some gravel but was willing to give it a go. I was welcomed to the funnest road I have driven since . . . the day before a Mary Hill
OK, it looked like fresh asphalt and narrowed to a single lane at points and most of the time it opened up near any corners. I encountered only two oncoming cars, but many campers parked in flat clear patches right up next to the road. It was a fun road and probably less dangerous than some of the above locations.
Another road that is a very fun road for low top speeds and just lots of cornering is (has several names) NW Meadow Lake Rd. out of Carlton to Beaver, Oregon south of Tillamook. There was a 3 mile section that was gravel, but I heard they had paved it in the last couple years.
Note that there are about 6 camping areas along the road that require caution.

North of White Salmon, WA there is a great road from BZ corner to Glenwood. Then go east towards Goldendale and then south on hwy 141 back to hwy 14

Hwy 1 - the Pacific Coast Highway - from Fort Bragg to San Francisco is beautiful. Be sure to do it traveling south. That way you'll be on the ocean side.
Hwy 101 (or is it Hwy 1?) from Monterey/Carmel through Big Sur and down the coast is a nice drive. Stop at Nepethe just south of Big Sur Village and have a cup of coffee and watch the fog lift off the ocean. Ventana, across the street is worth a visit if only to see the place and have a glass of wine.
Just about any road from I-5 to the Oregon Coast is nice - save 99W out of Portland toward Lincoln City (Unless you must see the Evergreen Museum in McMinville. I especially like the road from Roseburg to Coos Bay. The Mill Casino is a great place to stay and they host the occasional car event.
The "loop" from Eugene over McKenzie Pass and back through Santiam was a real treat - though I found myself wishing I'd done it on my motorcycle.
Any drive through the high desert of Central Oregon can be fun. There are several routes. Coming from the north, I'd suggest Hwy 35 from Hood River to Mt Hood and then just try to avoid the tribal police in the Warm Springs Reservation. Be sure to stop at Government Camp and have pie at the Huckleberry Inn.
Try Maupin. Tygh Valley, Shaniko, Antelope...
The back roads of Washington by way of Spanaway (HWY7) out back of Fort Lewis to Roy, Tenino and on through Rochester. (Wolf Haven near Tenino might be interesting, but I've never stopped there).
The drive around Mt Rainier is fun when the weather is nice. Paradise and to Sunrise.
The drive to Hurricane Ridge near Port Angeles is nice, especially when you take the Ferry from Edmonds to Kingston.
Port Townsend is worth a day trip at least. It's where the film "An Officer and a Gentleman" was filmed.
One of my favorite bike rides is from Snoqualmie Falls through Fall City and on to Duvall and Monroe and then the back roads to Snohomish. From there, find your way to Darrington and Grantie Falls and the back roads to Bellingham (by way of Chuckanut drive) and Mt Baker.
LaConner makes for a nice day trip....
Gig Harbor near Tacoma is fun... Tides Tavern is a must. Be aware the Tacoma Narrows Bridge is now a toll bridge.

So are the fish and chips at Spud on Alki. Gets crowded when the weather is nice, but you have the choice of take out and eat on the breakwater or the beach across the street. My favorite is to sit upstairs and watch the parade of people and cars drive by.

When the missus and I drove to the central Oregon coast last summer, we took Highway 103/Fishhawk Falls, connected onto Highway 26, and then took Highway 53, which was absolutely the greatest driving road. Seems like at least 100, 20-30 MPH corners before it connected up with 101 out by Newhalem. I'm already making plans to head that way again.

I have not taken this road myself, but a guy at work rode it on his bike and loved it.
Just east of Blue River on Hwy 126, you turn south on Aufderheide Dr. heading towards Cougar Resevoir. This turns into NF-19 and will take you all the way to Oakridge. I know the road is paved to the south end of the resevoir, but I'm not sure if it continues all the way to Oakridge. Lenny was riding his crotch rocket, so I'm assuming it is.
Just did a Google search and the road is paved the entire way.
