I bought a used 2004 C5 Z06 with 22,000.00 miles on it. The prior owner intstalled the Granatelli MAF sensor and 90mm Throttle body.

Do these after market products really make any performance difference over the stock OEM products, if so how much ?

The bigger Throttle body may improve throttle response.
If the engine is stock, neither will increase HP.
