First 500 miles
I am planning my first 500 miles and want to drive from seattle to spokane and back which is 272 miles one way. Is the requirement about 500 miles a rough number or am I better off doing a shorter route, doing the oil change with just short of 500 miles?

It's just like the game of horse-shoes. Close counts.
The most important thing for you do to do is continually vary your engine revs, up and down, during break-in drive. If your car is an A8, put in manual mode and keep flipping the paddles up and down to change gears. If it's a manual, do the same up and down gear changes.

If you're comfortable with the dealer in Seattle and it's easier for you, just do it when you get back. Don't sweat it.

Are you talking about a Z51 or Z06?
If so, like rooster og said and I'd do same, do it when you get back, even if over 500 miles.
Remember also, you're entitled to the free 500 mile oil change, MOBIL 1 ONLY (you HAVE to ask and make an appt. with the Corvette Tech ONLY for peace of mind). 9 quarts filled and the 10th given to you to top off. I've personally never even needed another ounce after the 9 quarts was added.
Best of all, have a fun road trip!~!

Ah gotcha, but it's somewhat the same, MOBIL 1 ONLY, Corvette Tech ONLY. I don't think you have to worry about overfilling with the wet sump.
We do with our dry sumps.

I had mine done a bit after 500, it doesn't really matter. They just don't want you to go to 3-5 thousand.
You should get 2 oil changes on TOP OF the 500mile one. My dealer actually, just didn't record the 500mile operation so.... I get 3 free ones on my 2016... so... yay!

That is probably the best way to put your first 500 miles on the car.

In my M7 used 4th, 5th and 6th did not use 7th or ECO so was never in 4 cylinder mode. Also allowed the engine to brake in 4th gear as I decelerated.
Following the GM bulletin on the 500 mile change, would not have the oil changed too early and 600 to 700 miles would not be a problem, IMO. Especially, if again following the bulletin, you did not operate the engine at sustained high rpm until the oil was changed. Would not follow the "drive it like you stole it" suggestion that could cause the oil foaming to occur!
The idea is to have the silicone from curing seals and sealants leave those seals and get into the oil. This according to GM depletes the anti-foaming agents in the oil and can cause foam to burp with the air that is always coming from the dry sump tank (lots of air pumped from the pan to the tank with the oil.)
If you changed oil too early, like at 200 miles, would assume some seals could still be in the curing stage and silicone would then get into the new oil. Also assume GM did the tests to show in 500 miles with hot oil as you drive, most if not all is gone. Just my thoughts.

If you don't change the oil at or before 501 miles the endings will blow up.
I kid of course. I did my non Z51 at 2300 mi, then again at 5300. At 8200 now. Gonna shoot for a year or 5k, which ever comes first.
