What about running a square set up with 19's all around.
The reason I'm asking all these silly questions is I'm considering buying a Z06 in the future (replacing my C5 Z) and am trying to figure out running costs. I do a lot of track days. Being able to running 19 inch tires would be a big cost savings; running 18s would be even better.
I suppose running a square set up could mess up the suspension settings and rear end ratio, unless I ran a high aspect ratio.

I have a set of 18" Signature Wheels - 11" front & 13" rear that clear APRacing front brake rotors and calipers. Excellent quality wheels, designed and tested in the US, at a great price. Knurled bead area to help prevent tire slip is a plus.

315/30/18 fronts 345/35/18 rear. Maintains stock tire diameters works great. You give up a lot of rear traction if you try to run a square setup.

what type of tires with this? rims?
with the sizes you mentioned above are those hoosier r7's or a7's or something else? What brand of rim and rim sizes? Does it clear CCB's on a Z07? do you need spacers. Any rubbing at full lock (steering) thanks

to the OP, CW4L is THE place to get your track rims, I give both Forgeline and CW4L my highest recommendation, (picked up a set of Forglines from Gerry and couldn't be happier) he will hook you up (no pun intended lol)
