The Corvette Racing factory team races in the Tudor United Sports Car Championship (and this week at Le Mans). In the United series there is also a prototype with "Corvettes" in them, although outside of the looks of the front and tail, there isn't too much Corvette actually in them. These are on TV just about every race.
I believe Corvettes still race in the Trans Am series as well. Unfortunately, the production-based Corvettes from last year's Rolex series went away with the merger.
This is a good weekend to start watching. Le Mans will be on Fox Sports 1 and 2 for like 22 of the 24 hours. For a new viewer, it is a little hard to follow because there are multiple classes racing at the same time, so there are several "leaders". The Corvette class is small this year with the withdrawal of the Viper team. That said, 24 hour races are a good test of the car's reliability, speed, drivers, and team.
One final note, the new series all have "balance of performance" rules to make the racing close. So, don't get too high or too low on how well the Corvettes do, it is designed so no team wins every race, and if they do, they will get handed extra weight and smaller restirctors.
