Counterclockwise to make it kick in sooner, if your fan clutch is configured to kick in at 210 currently.

If it's already adjusted to kick in early, then turning it clockwise will make it come in later.

Great tip. I just did my big block (Chevelle at the moment). It was locked full CW. 1/2 turn CCW and we'll see what happens.

I tried this adjustment on my '61 clutch but really didn't see much difference -- others have though..

Just got back from a 1 hr drive. Temp never budged off of 170 deg.
Outside temp is 75 deg.

170º is a little on the cool side for making sure all the moisture is removed from your oil. If you have it all working properly now you can install a 180º or 195º and you'll be in business.

The thermostat only controls the bottom number, it won't let the engine get cooler than the number set on the thermostat, but has no effect on how high the temperature can go.

Jeff, I've got the same clutch and am running a little warm. Did you notice any difference in the engine temp after the adjustment?

No, extensive testing showed that nothing really keeps my 62 from getting up to 220 is the car is left to idle for about 30 minutes or so. The car runs at 175 at speed, but sit at a long stop light, and the temps start to climb. I suspect lots of crap in the coolant passeges of the block.

Mine would only move 180deg CCW then stop. You could move it back but it would not do complete revolutions.
