I used to use aviation stripper also, but I couldn't find it at the local NAPA or Ace hardware store. So I tried this Permatex paint stripper from NAPA that is in a spray can. I did my big block valve covers today (I have a twin of your car) and it works fantastic. It immediately curls up the paint to easily scrape (more like wiping) the paint off the surface after 5-10 min, without the overwhelming fumes and contact risk of aviation stripper.

I have used Captain Lee's stripper with no problem, other than a little messy and very careful to wash the surface again and again. My preference.....I used the razer blade method on most of my 1954 and very pleased with the time and felt it did not damage the fiberglass. Lots of little paint flakes to sweep up the shop vac though.
