Thanks all for the help! I'll try the pop-up springs with blocks first since the hinges are new. If that doesn't work I'll go the modern hinge route.

Are there any adjustments to the front pop-ups? They mount solidly to the radiator frame. The only thing I can see that might make a difference is the nut on the bottom of the bolt, but that's no more than an eighth of an inch. And that spring really is too strong!

So....
you can shim the spring - take it apart and shim it
You can remove a spring - last resort
You can slot the holes in the pop up to give you just enough pop up

Yep. I did think of all that, including a weaker spring. The best bet was a shim under the bolt head (inside the cup), so I cut two, which gave me just enough height.

One way to adjust the door spacing is to shim certain body mounts.
