Default how suspicious would you be

if you walked into a higher end restoration shop that has a 67 Corvette body/ frame that looked to have its paint removed with a right hand angle grinder already in gray primmer that they shot the whole body inside and out with engine compartment in primer as well and both the trim and vin tag are gone. with the body shop playing dumb about the vin tag being removed

I'd be careful not to get too close and burn myself on it.

VIN tag? ...we ain't got no stinking VIN tags. It ain't a car 'til we put a VIN tag on it. No law agin' having' pile of assembled unmarked parts on hand. Get you own VIN, we're strictly above board here.......

More suspicious than if it was a 1984 Corvette.

In all fairness, that car was somebody's dream. Call the cops and let them know.

It would make me question the integrity of every restoration they have done previous.

I see a wonderfully documented, numbers matching and highly-optioned black/red leather 435hp in our near future.

It would make me question what you think is a "higher end restoration shop".

My car, I would be tempted to grab my AR-15 and administer justice on my own as the State of Illinois sells justice at a higher price than I can afford.
Someone else's car, I would try to see if the Cops would investigate (not likely) of find the owner to warn him of his loss ahead of time.

I think I would reconsider them being a "higher end restoration shop".

Plus, it would cause me to push further, contact law enforcement, and at the very least make them aware of the vehicle.

Without knowing anything other than your opening post, I wouldn't suspect anything. Are they looking to sell it as yard art? Were you there looking to buy something that was advertised as....? Did you break into the shop to steal it? Need more info.

If you are walking around a shop you must know someone there. They just dont let people from the street walk around. You must have spent time looking at the car and for the Vin?

I would think someone bought the car to make a resto mod.

Did you ask about the car?
