Could be a dozen things, even an ignition coil...
But my first guess would be the choke sticking because the piston in the choke housing is frozen up...
Take off the air cleaner and while holding the throttle linkage in the wide open position work the choke plate back and forth on the rear carb and see if it binds...

I suppose you do know that engine is supposed to idle a little rough whether hot or cold. Not supposed to stall though. Idle speed should be 750 or a little more, hot.

I’ve never gotten a set of C1 dual quads to idle nicely below 850 RPM on a solid lifter car.
