What needs to move over to a new fuel tank?
I'm replacing the gas tank in my 76 and have ordered a new one. Besides the filling area section (held on by several bolts on the top), does anything else need to be moved from the old tank to the new one? I know that some years used an internal bladder and some didn't. Do the new year-correct tanks come with the bladders already in them?

New tanks have no bladder. If yours has a bladder, then you
need to use the top section of the old bladder as a
spacer/gasket between the sending unit and tank.

So it's not necessary to have the whole bladder in the new tank, just the top ring where it serves as the gasket? It might sound kind of stupid, but I wanted to make sure that there was no problem in having the gas in direct contact with the metal tank.

Starting in '75 they had a bladder in the tank. No less safe without one than in the earlier cars. In fact if your keep the tank shield you have more than the early ones had around the tank.
The top ring of the bladder is needed to secure the fuel sender unit. You will need the rubber gasket that fits between the bladder neck and the fuel sender. So carefully remove that.
