Default I may be to wide

I'm 6' 270lbs with wide shoulders.. I rode in a '80 today and felt like a sardine in a can.. May need to step up to a C6 for the extra width (I don't like the looks of a C4 or C5)

I am 6'1 and 245 and I feel tight in there. I put a smaller diameter steering wheel on and it helped.

I'm 6'1 and 290 and still can get into my 75 vette. once in it is a little cramp but the seat are different then the 79-82 models. Some have a 2" boster and other have a 4" boster. The 68-78 seat are flat and may help you seat a little better then the 80' model. I also changed the steering wheel to a smaller unit.

It sounds like you may need to consider something else. C3 cars are really cool looking, but besides the issues you mention can require a lot of attention. From reading the statement below, it sounds like you are looking for something more utile. I am not certain you will be more comfortable in a C6 because I have never sat in a 1980, but the C6 may be a bit tight also. I drove a C6 for 8 years and found it to be fairly comfortable, but I am only 5'10". I do have wide shoulders though. The seats in my 1972 are pretty comfortable, but my head is pretty close to the top of the car. The seats on my 1972 are however a little flatter than the latter model C3s, so you may want to look at an earlier C3.

You wouldn't have any problems in my car as my seats are toast and I pretty much sit on the floor. LoL
Your an inch shorter than my brother but weigh about the same and he's pretty cramped in the passenger seat (I don't let anyone drive my baby). I've ridden in a few '80 models but don't remember if they had a little more room than my '71 since they have different door cards. I know one of the big design changes from '68 to '69 was the door cards as the '68 design has less shoulder room that the '69's on up.
