Default edlebrock carb 2small????

hi, im new to the corvette world. i recentley bought a 75 stingray with a stock 350, headers and no cats. the guy i bought it from says the motor is rebuilt. auto tranny. i was crusing around about 70 miles from home when it started floodind and running rough, i made it to an autozone and the quadrajet card was pouring gas from where the throttle linkage is. the only carb the had was a edlebrock performer 600cfm, so i bought it and had to remove the egr and put a plate with a gasket in its place, also a adapter so the carb would fit the stock intake. does it matter what adapter i use? the open or the on with the 4 holes? cause now it wont spin the tires like before and doesnt seem as fast. is it to small? i was in a bind and a long way from home. any help would be appreciated. thanks
