I have an AIM and a Haynes manual, but I noticed there are some other "restoration" books out there and was curious which ones people thought were the best. Anything with a lot of actual pictures instead of drawings would be a big plus to me, also detail information etc... Love to hear any opinions!!
I am using the 'Chevrolet Corvette Restauration Guide' by Lindsay Porter, Motorbooks Intl. I am working on a 75'. I like it. It has detailed descriptions and a lot of pictures.
Don't know if there are other drawings out there than the assembly guides.
I came across the catalog CD from Keen Parts. They did a nice job categorizing all their parts in assembly drawings. Sometime I take my laptop out to the garage to look things up while working on the car.
No single restoration book will answer all your questions. Purchase four or five of them, read through all of them, and use the best stuff from each.
You will want the AIM as a reading companion. The NCRS Judging Manual for your year will also be useful. If you have a '69, you will want Rick Bizzoco's book. For the 68-77 models, you will want either of Dr. M. F. Dobbins' books, or both. One volume covers 68-72; the other volume covers 73-77.

While not a restoration GUIDE, I've found the GM CHASSIS SERVICE MANUAL to be a big help and full of good information. There's one for each year. It has pictures AND disassembly, repair, and reassembly instructions. The larger vendors carry it.
