Does anyone know how long this should take?

If you're going to sandblast, clean and paint all of the suspension components as part of the rebuild, the job could take a couple of days. If you're simply dropping the front end, knocking all the bushings and ball joints out of it and pressing in new stuff with new replacement tie rods and idler arm, you can do the whole job in about 6 hours, assuming you're using a lift and have good/proper power tools. Add to that time the cost for an alignment, and you're up in the 10-hour range for labor. At common shop rates of $75 - 100/hour, you're looking at $750-1000 for labor plus parts, if you're paying someone to do it.
