What do you guys use and what is your opinions on the best brand and setup? How do you hook up the switches and thermostats? Also will my alternator pull all that extra power?
Well - I have a upgraded 100 AMP alternator and I'm running 3 electrical fans... I don't run them on a thermostat.. One of the fans is permanently on and the other 2 fans (Flex-a-Lite dual electric) are switchable...
The always on fan that I use is a 2950 cfm Permacool fan.. This fan was less then $100 but outperforms the twice as expensive Flex-a-Lite duals...  . If I would have to decide again - I would use dual Permacool fans... For a non-radical stock engine - one Permacool fan should be enough to keep the car cool...
IMHO, dual SPALs are the best I've found. Much higher flow than the others, and they cool the 502 very well. I think Tom DeWitt sells them.

I've heared good things about the spals.. However - they also pull a lot of amps... and cost more than 3 times as much the Permacool fan that moves the same amount of air and pulls less amps.. If you run 2 Permacool 16" fans - you will ...
1) pull less amps (even if running 2 of them)
2) Flow much more air (2950 for the puller and 2100 for the pusher = 5050 cfm)
3) pay over $100 less than for the spals...
Even a single Permacool fan should be able to keep a non-radical engine cool...
Be careful on what fans you buy. There's a guy that had his fan setup start a fire in his engine compartment. I can't remember what brand he had but I KNOW it wasn't Spal. Do a search to find the thread I'm talkin bout. That's the main reason I went with the Spal setup from Dewitt, quality.

I question this statement. You failed to give any details that would back this up. What is the actual cost of the fans we are comparing. Does this cost include the mounting brackets? What are the amp draws of each type? Why do you need to have a push and a pull? Also, the flows are not additive. You would only see the higher of the two fans going through the radiator, not both. I don't know what the specs are on your fans but here's the info on the spal dual 11's, which BTW is the factory installed equiptment on all the italian sports cars.
Amp draw 12.5 each or 25amp when both are running.
Dewitt sells the fan only (which requires no brackets) for $277
The air flow is 2780 cfm, which is about the same as yours.
I don't understand all the hype and attention with amp draw and larger alt. I've had sound systems that pulled 25 amps. Finally, the spal dual package is rectangular and covers 90% of the core face. A single 16" fan would only cover about 50% of the core face. The dual pull fan is not an obstruction in front when driving high speeds and it also has built in flapper check valves to allow for free flow when the fans are not required.
